Evanescence has some good instrumentals. For more of a MH-like spirit, there are a few celtic instrumentals by Enya. If you're into J-Pop, check out Yoko Kano, specifically Inner Universe and Rise. Also Bjork's "Hunter" may be a good choice. And check out the Final Fantasy Crystal Chronicles soundtrack, it has the same sort of atmosphere as MH and the tracks are generally each of the same epic quality as the original/freedom 1 town music.
